Since I've been back I've been taking care of all the health related things I've let sit on the back burner. I didn't go to the doctor unless absolutely necessary in Switzerland because 1- I had a slight aversion to doing it due to the language barrier and 2- I knew our time in Switzerland was short lived.
So, doctors visits, physicals and blood tests oh my!
Today I received some of my blood test results. And imagine my surprise when my doctor was blown away by my cholesterol numbers. So much so he gave me a thumbs up. Go me!
And then I told Brian and he said, "Duh, Meghan, we've been in Switzerland eating fantastic healthy food for the last few years."
I didn't feel so proud of myself after that.
But my point is, it was super healthy to do because healthy options are almost your only option over there. Beef is insanely expensive, the bread is so yummy you don't need to eat pastries, and fried food is practically non-existent in Switzerland. Also, fast food isn't readily available; it was easier for me to whip something up at home then drive the 15 minutes to the super expensive McDonald's two towns over.
And that is saying a ton because Rachael Ray I am not.
We're going to try our best to keep up the Swiss-like diet. It's going to be difficult for us but we'll give it our best shot! And then, of course, I'll keep you posted on how it goes.

Einsiedeln Christmas Market
On Tuesday, Marion, Mom, and I went to the Einsiedeln Christmas Market with my friend Kacey. Supposedly the biggest market in Switzerland, we had to check it out.
Of course we picked a cold, rainy, snowy day to go. Why do I say rainy and snowy in the same sentence? Because what came down was totally dependant on where you were. At our apartment, it was rain. At the market, it was snowing. But that only gave the market some great wintertime ambiance. Once you got used to the cold, that is.

The market was fairly easy to find right off of the Einsiedeln train station. The market stands are set up along some side streets and lead right up to the monastery.

We walked around a bit, exploring the stands. And then Kacey and my Mom checked out the monastery. I wasn't feeling up to climbing another hill. They said it was very nice- I promised to drag Brian there next year.
While walking around, we discovered our new favorite treat: Opfelchuechli.
We now refer to these as heaven. These babies are slices of apple, dipped in dough, deep fried, and then smothered with vanilla sauce and cinnamon.
Yummmmmmmmmmmmmmmm.
Get some. Fast. They are that good, I swear!!!!
After some walking around, we decided to head back to the train. On the way back though, we had to stop at the carousel. We can't get past these things without stopping for at least one ride for Marion. I've noticed the prices are higher at Christmas markets. One more thing for me to be in shock about- pricewise. But it is worth it for that big smile she gets on her face.
Totally worth it.

A nice shrimp dinner
My mom went to the grocery store while she was here to fill our refrigerator and freezer with food. One of the items she bought was frozen shrimp.
So the other night, I decided to break them out and add them to a pasta dish I was throwing together.
I say throwing together because I've never really been a good cook. I'm not patient when it comes to cooking and I tend to see what I can whip up. Sometimes it turns out well. Other times, not so much.
That night I was making spaghetti and decided to stir fry some peppers I had to add to the dish. When I saw the shrimp I was excited. I love shrimp!
I took them out of the frig, put them on the counter, and opened the packaging. I immediately became nauseaus.
They still had heads on them.
Yuck.
My reaction surprised me. I'm from Maryland and include ripping steamed blue crabs from limb to limb as one of my favorite summer pastimes.
But shrimp heads? Ewwwwww.
So I threw them into a bowl of water to thaw and let Brian deal with them when he came home. He wasn't too pleased as he was a bit weirded out by the shrimp heads as well. But he ripped those heads off, peeled the shrimp, and did a damn fine job of it!
I cooked those suckers up and threw them into the dish. And it was pretty good, if I do say so myself. :-)
